Ingredients
  

Shrimp
  • 1 pound large shrimp peeled and deveined
Avocado
  • 2 medium ripe avocados diced
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 small red onion finely chopped
Dressing
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
  • 1 teaspoon cilantro chopped, for garnish

Method
 

Prepare the Shrimp
  1. Heat a grill pan or skillet over medium-high heat. Add the shrimp and cook for about 2-3 minutes on each side until they are pink and opaque.
  2. Remove the shrimp from the heat and let them cool slightly.
Make the Dressing
  1. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine the cooked shrimp, diced avocados, cherry tomatoes, cucumber, and red onion.
  2. Pour the dressing over the salad and gently toss to combine.
  3. Garnish with chopped cilantro before serving.
