Ingredients
  

Salad Base
  • 4 cups mixed greens such as arugula, spinach, and kale
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 avocado ripe sliced
  • 1/4 cup red onion thinly sliced
Green Goddess Dressing
  • 1/2 cup Greek yogurt or vegan yogurt
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped
  • 1 clove garlic minced
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon olive oil optional

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cucumber, cherry tomatoes, avocado, and red onion.
  2. Toss gently to combine all the ingredients.
Make the Dressing
  1. In a separate bowl, whisk together the Greek yogurt, parsley, basil, garlic, lemon juice, and olive oil until smooth.
  2. Season with salt and pepper to taste.
Combine and Serve
  1. Drizzle the green goddess dressing over the salad and toss to coat evenly.
