Ingredients
  

Base Ingredients
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can crushed tomatoes about 400g
  • 1 cup heavy cream
  • 1 tablespoon sugar to balance acidity
Spices
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon salt to taste

Method
 

Prepare the Base
  1. Heat the vegetable oil in a saucepan over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
Add Tomatoes and Spices
  1. Pour in the crushed tomatoes, followed by the garam masala, cumin, coriander, turmeric, cayenne pepper, and salt.
  2. Stir well to combine and bring to a simmer.
  3. Reduce the heat and let it cook for about 15 minutes, stirring occasionally.
Finish the Sauce
  1. Add the heavy cream and sugar to the sauce, stirring until fully incorporated.
  2. Simmer for an additional 5 minutes, allowing the flavors to meld.
  3. Blend the sauce with an immersion blender for a smooth texture, if desired.
