Ingredients
  

Shrimp and Asparagus
  • 1 pound large shrimp peeled and deveined
  • 1 pound asparagus trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil for cooking
Sauce
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced

Method
 

Prepare the Sauce
  1. In a mixing bowl, combine sweet chili sauce, soy sauce, lime juice, minced garlic, and minced ginger. Mix well and set aside.
Cook the Asparagus
  1. Heat olive oil in a large skillet over medium-high heat. Add asparagus and sauté for about 3-4 minutes until tender-crisp.
Cook the Shrimp
  1. Add the shrimp to the skillet with asparagus and cook for 3-4 minutes until shrimp are pink and opaque.
Combine and Serve
  1. Pour the sauce over the shrimp and asparagus, stirring to coat evenly. Cook for an additional 1-2 minutes until heated through. Serve immediately.
