Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes washed and scrubbed
Filling
  • 1 can black beans rinsed and drained
  • 1 cup corn canned or frozen
  • 1 cup avocado diced
  • 1 cup cherry tomatoes halved
  • 1 bunch cilantro chopped
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
Cilantro Lime Crema
  • 1 cup Greek yogurt
  • 1 lime lime juice freshly squeezed
  • 1 clove garlic minced
  • 1 tablespoon cilantro chopped
  • 1 pinch salt to taste

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. Pierce each sweet potato several times with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45 minutes, or until tender.
Make Cilantro Lime Crema
  1. In a blender, combine Greek yogurt, lime juice, minced garlic, chopped cilantro, and a pinch of salt.
  2. Blend until smooth and creamy. Adjust seasoning if necessary.
Prepare Filling
  1. In a mixing bowl, combine black beans, corn, diced avocado, halved cherry tomatoes, chopped cilantro, cumin, salt, and pepper.
  2. Mix gently to combine all ingredients.
Assemble and Serve
  1. Once the sweet potatoes are cooked, remove them from the oven and let cool slightly.
  2. Slice each sweet potato down the middle and gently fluff the insides with a fork.
  3. Spoon the filling mixture into each sweet potato.
  4. Drizzle with cilantro lime crema before serving.
