Method
Prepare the Rice
- In a rice cooker, combine sushi rice and water. Cook according to rice cooker instructions.
- Once cooked, transfer rice to a mixing bowl. Mix in rice vinegar, sugar, and salt while the rice is still warm. Let it cool.
Fry the Rice
- Once the rice is cool, form it into small squares or rectangles.
- Heat vegetable oil in a frying pan over medium heat. Fry the rice squares until golden brown and crispy on both sides, about 2-3 minutes per side.
Prepare the Spicy Tuna
- In a mixing bowl, combine diced tuna, mayonnaise, sriracha, soy sauce, sesame oil, and green onion. Mix well.
Assemble the Dish
- Top each crispy rice square with a generous spoonful of the spicy tuna mixture.
- Garnish with black sesame seeds and microgreens. Serve immediately with wasabi on the side if desired.
