Ingredients
  

Pasta
  • 12 oz penne pasta
Sausage
  • 1 lb Cajun sausage sliced
Vegetables
  • 1 cup bell peppers sliced
  • 1 cup onion chopped
  • 3 cloves garlic minced
Sauce
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Garnish
  • 1/4 cup parsley chopped

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Cook the Sausage
  1. In a skillet over medium heat, add the sliced Cajun sausage. Cook until browned, about 5-7 minutes.
Sauté Vegetables
  1. Add the chopped onion and sliced bell peppers to the skillet with the sausage. Sauté for about 5 minutes until the vegetables are tender. Stir in the minced garlic and cook for an additional minute.
Make the Sauce
  1. Pour in the heavy cream and chicken broth. Stir in the Cajun seasoning, salt, and black pepper. Bring to a simmer and cook for 5 minutes until slightly thickened.
Combine and Serve
  1. Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for an additional 2 minutes to heat through. Garnish with chopped parsley before serving.
