Method
Prepare the filling
- In a large mixing bowl, combine shredded chicken, black beans, corn, cheese, cumin, chili powder, garlic powder, and salt. Mix well.
- Lay an egg roll wrapper on a clean surface, with one corner pointing towards you.
- Place about 2 tablespoons of the filling in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.
Fry the egg rolls
- Heat vegetable oil in a frying pan over medium heat.
- Carefully add egg rolls to the hot oil, a few at a time, and fry until golden brown, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- Serve hot with your favorite dipping sauce.

These egg rolls can be baked instead of fried. Brush with oil and bake at 400°F (200°C) for 15-20 minutes until golden.
