Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
S'mores Filling
  • 1 cup chocolate chips semi-sweet
  • 1 cup mini marshmallows
  • 1 cup graham cracker crumbs

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture, mixing until just combined.
Assemble and Bake
  1. Spread half of the cookie dough into the prepared baking pan.
  2. Sprinkle the graham cracker crumbs evenly over the dough, followed by the chocolate chips and mini marshmallows.
  3. Drop spoonfuls of the remaining cookie dough over the filling, covering as much as possible.
  4. Bake in the preheated oven for 25 minutes or until golden brown. Allow to cool before cutting into bars.

Notes
