Method
Prepare the Cookie Base
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture, mixing until just combined.
Assemble and Bake
- Spread half of the cookie dough into the prepared baking pan.
- Sprinkle the graham cracker crumbs evenly over the dough, followed by the chocolate chips and mini marshmallows.
- Drop spoonfuls of the remaining cookie dough over the filling, covering as much as possible.
- Bake in the preheated oven for 25 minutes or until golden brown. Allow to cool before cutting into bars.
