Chicken and Potatoes
  • 4 pieces boneless, skinless chicken breasts
  • 1 pound baby potatoes halved
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 6 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

Preparation
  1. Place the halved baby potatoes at the bottom of the slow cooker.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning, then place them on top of the potatoes.
  3. In a bowl, mix together the chicken broth, heavy cream, minced garlic, and grated Parmesan cheese.
  4. Pour the mixture over the chicken and potatoes in the slow cooker.
Cooking
  1. Cover and cook on low for 6 hours or until the chicken is cooked through and tender.
  2. Once cooked, shred the chicken in the slow cooker and stir everything together.
  3. Garnish with chopped fresh parsley before serving.
