Wash and chop the potatoes into bite-sized pieces. Toss with olive oil, salt, pepper, garlic powder, and paprika.
Place the seasoned potatoes in the slow cooker, spreading them evenly at the bottom.
Season the chicken breasts with salt, pepper, paprika, onion powder, and Italian seasoning.
Lay the seasoned chicken breasts on top of the potatoes in the slow cooker.
Sprinkle minced garlic over the chicken and pour enough Buffalo Wild Wings Garlic Parmesan Sauce to coat the chicken.
Cover and set the slow cooker to cook on low for 6–7 hours or on high for 3–4 hours.
In the last 30 minutes of cooking, sprinkle shredded mozzarella cheese over the top and cover to melt.
