Add the diced onion and minced garlic to the skillet and sauté for about 2-3 minutes until the onion becomes translucent.
Increase heat to medium-high and crumble in the ground turkey. Cook until browned, about 5-7 minutes, seasoning with salt, pepper, and paprika.
Stir in the chopped zucchinis and diced bell pepper, cooking for an additional 3-4 minutes until the vegetables soften.
Add the can of diced tomatoes and oregano, stirring until well combined.
Lower the heat and let the mixture simmer for about 10 minutes, stirring occasionally.
Taste and adjust seasoning as needed.
