Method
Prepare the Filling
- Heat olive oil in a skillet over medium heat. Add sliced onions and salt, cooking until onions are caramelized, about 15 minutes.
- Remove from heat and let cool slightly. In a mixing bowl, combine the caramelized onions, pork sausage, gruyère cheese, and thyme.
Assemble the Rolls
- Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface to about 1/8 inch thick.
- Cut the pastry into rectangles, about 4 inches by 6 inches. Place a generous amount of filling along one edge of each rectangle.
- Roll the pastry over the filling, sealing the edges with a fork. Place the rolls seam-side down on a baking sheet.
- Brush the tops with beaten egg for a golden finish.
Bake
- Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.
- Remove from oven and let cool slightly before serving.
