Ingredients
  

Filling
  • 1 tablespoon olive oil for sautéing
  • 2 cups onions thinly sliced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 pound pork sausage casings removed
  • 1 cup gruyère cheese shredded
  • 1 tablespoon fresh thyme chopped
Pastry
  • 1 package puff pastry thawed

Method
 

Prepare the Filling
  1. Heat olive oil in a skillet over medium heat. Add sliced onions and salt, cooking until onions are caramelized, about 15 minutes.
  2. Remove from heat and let cool slightly. In a mixing bowl, combine the caramelized onions, pork sausage, gruyère cheese, and thyme.
Assemble the Rolls
  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface to about 1/8 inch thick.
  2. Cut the pastry into rectangles, about 4 inches by 6 inches. Place a generous amount of filling along one edge of each rectangle.
  3. Roll the pastry over the filling, sealing the edges with a fork. Place the rolls seam-side down on a baking sheet.
  4. Brush the tops with beaten egg for a golden finish.
Bake
  1. Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.
  2. Remove from oven and let cool slightly before serving.
