Ingredients
  

Biscuit Dough
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cold and cubed
  • 3/4 cup milk whole or buttermilk
Filling
  • 1 lb breakfast sausage cooked and crumbled
  • 8 oz cream cheese softened
  • 1/2 cup shredded cheddar cheese optional
  • 1 tsp garlic powder optional
  • 1 tsp black pepper to taste

Method
 

Prepare Biscuit Dough
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine flour, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined. Do not overmix.
Make Filling
  1. In a separate bowl, mix the cooked sausage, softened cream cheese, cheddar cheese, garlic powder, and black pepper until well combined.
Assemble Biscuit Bites
  1. On a floured surface, roll out the biscuit dough to about 1/4 inch thick.
  2. Cut the dough into squares (about 3x3 inches).
  3. Place a spoonful of the sausage filling in the center of each square.
  4. Fold the corners of the dough over the filling to form a pocket and pinch to seal.
  5. Place the filled bites on a baking sheet lined with parchment paper.
Bake
  1. Bake in the preheated oven for 15-20 minutes or until golden brown.
  2. Remove from the oven and let cool slightly before serving.

Notes

These biscuit bites can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
