Method
Prepare Biscuit Dough
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine flour, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk until just combined. Do not overmix.
Make Filling
- In a separate bowl, mix the cooked sausage, softened cream cheese, cheddar cheese, garlic powder, and black pepper until well combined.
Assemble Biscuit Bites
- On a floured surface, roll out the biscuit dough to about 1/4 inch thick.
- Cut the dough into squares (about 3x3 inches).
- Place a spoonful of the sausage filling in the center of each square.
- Fold the corners of the dough over the filling to form a pocket and pinch to seal.
- Place the filled bites on a baking sheet lined with parchment paper.
Bake
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.

These biscuit bites can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
