Ingredients
  

Salad Base
  • 4 cups mixed salad greens such as romaine, spinach, and arugula
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup corn cooked or canned, drained
  • 1 cup black beans cooked or canned, drained and rinsed
  • 1 avocado sliced
Grilled Chicken
  • 2 breasts chicken breast boneless and skinless
  • 1 teaspoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon honey
  • 1 teaspoon cilantro chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, cumin, paprika, salt, and black pepper.
  3. Rub the spice mixture over the chicken breasts.
  4. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  5. Remove from the grill and let it rest for 5 minutes before slicing.
Assemble the Salad
  1. In a large mixing bowl, combine the salad greens, cherry tomatoes, cucumber, corn, black beans, and avocado.
  2. In a separate bowl, whisk together the dressing ingredients until well combined.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Slice the grilled chicken and place it on top of the salad.
  5. Serve immediately.
