Salted Sage Honey Butter Brioche Rolls

Ingredients
  

Brioche Dough
  • 4 cups all-purpose flour plus extra for dusting
  • 1 cup whole milk warm
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter melted
  • 3 large eggs
  • 1 packet active dry yeast
  • 1 teaspoon salt
  • 2 tablespoons fresh sage finely chopped
Honey Butter Topping
  • 1/2 cup unsalted butter softened
  • 1/4 cup honey
  • 1/2 teaspoon sea salt
  • 1 tablespoon fresh sage finely chopped

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm milk and yeast. Let it sit for 5 minutes until frothy.
  2. In a stand mixer, combine flour, sugar, salt, and chopped sage. Mix well.
  3. Add the yeast mixture, melted butter, and eggs to the dry ingredients. Mix on low speed until combined.
  4. Knead the dough for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
Shape and Bake the Rolls
  1. Preheat the oven to 375°F (190°C).
  2. Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a ball.
  3. Place the rolls on a baking sheet lined with parchment paper, cover, and let rise for another 30 minutes.
  4. Bake in the preheated oven for 15-20 minutes until golden brown.
Prepare Honey Butter
  1. In a bowl, mix softened butter, honey, sea salt, and chopped sage until well combined.
  2. Brush the warm rolls with the honey butter as soon as they come out of the oven.

Notes
