Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken breasts cut into 1-inch cubes
  • 1/2 cup ranch dressing for marinating
  • 2 cloves garlic minced
  • 1/2 cup Parmesan cheese grated
  • 1 tbsp olive oil for grilling
  • 1 tsp black pepper to taste
  • 1 tsp salt to taste
Vegetables (optional)
  • 1 bell pepper red cut into 1-inch pieces
  • 1 cup cherry tomatoes whole
  • 1 zucchini medium sliced into rounds

Method
 

Marinate the Chicken
  1. In a large bowl, combine the ranch dressing, minced garlic, Parmesan cheese, black pepper, and salt. Add the chicken cubes and toss to coat evenly.
  2. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Thread the marinated chicken onto the skewers, alternating with bell pepper, cherry tomatoes, and zucchini if desired.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.
  2. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  3. Remove from the grill and let rest for a few minutes before serving.
