Marinate the Chicken
- In a large bowl, combine the ranch dressing, minced garlic, Parmesan cheese, black pepper, and salt. Add the chicken cubes and toss to coat evenly.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Prepare the Skewers
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken onto the skewers, alternating with bell pepper, cherry tomatoes, and zucchini if desired.
Grill the Skewers
- Preheat the grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
