Quick & Easy Mongolian Chicken

Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tbsp soy sauce for marinade
  • 1 tbsp cornstarch for coating
  • 1 tbsp vegetable oil for frying
Sauce
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tbsp ginger minced
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup broccoli florets
  • 1 cup carrots sliced
Garnish
  • 2 tbsp green onions chopped
  • 1 tbsp sesame seeds

Method
 

Marinate Chicken
  1. In a bowl, combine chicken pieces with 2 tablespoons of soy sauce and cornstarch. Mix well and let marinate for 10 minutes.
Prepare Sauce
  1. In a separate bowl, whisk together 1/2 cup soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger. Set aside.
Cook Chicken
  1. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables
  1. Add bell pepper, broccoli, and carrots to the skillet. Stir-fry for another 3-4 minutes until vegetables are tender-crisp.
Combine with Sauce
  1. Pour the prepared sauce over the chicken and vegetables. Stir well to coat and cook for an additional 2-3 minutes until the sauce thickens slightly.
Serve
  1. Garnish with chopped green onions and sesame seeds. Serve hot over rice or noodles.
