Method
Prepare the Pasta
- Preheat the oven to 375°F (190°C). Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
Make the Filling
- In a mixing bowl, combine ricotta cheese, pumpkin puree, half of the mozzarella cheese, Italian seasoning, salt, and black pepper. Mix until well combined.
Stuff the Shells
- Fill each cooked pasta shell with the pumpkin ricotta mixture and place them in a baking dish.
Add Sauce and Cheese
- Pour marinara sauce over the stuffed shells, then sprinkle the remaining mozzarella cheese and Parmesan cheese on top.
Bake
- Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Serve
