Ingredients
  

Gnocchi
  • 1 pound pumpkin gnocchi store-bought or homemade
Creamy Sauce
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1 teaspoon dried sage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Topping
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Gnocchi
  1. Cook the pumpkin gnocchi according to package instructions until they float. Drain and set aside.
Make the Creamy Sauce
  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the heavy cream, vegetable broth, dried sage, salt, and black pepper. Bring to a simmer and cook for 5 minutes.
Combine and Bake
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked gnocchi and creamy sauce. Mix well.
  3. Transfer the mixture to a baking dish. Top with shredded mozzarella and grated Parmesan cheese.
  4. Bake in the preheated oven for 20 minutes or until the cheese is bubbly and golden.
  5. Remove from the oven and sprinkle with fresh parsley before serving.

Notes
