Ingredients
  

Couscous Base
  • 1 cup couscous uncooked
  • 1 cup vegetable broth or water
  • 1 tablespoon olive oil for flavor
  • 1 teaspoon salt to taste
Pesto and Vegetables
  • 1/2 cup pesto store-bought or homemade
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh, chopped
  • 1/4 cup parmesan cheese grated, optional

Method
 

Prepare Couscous
  1. In a pot, bring vegetable broth to a boil. Stir in couscous, olive oil, and salt. Remove from heat, cover, and let sit for 5 minutes.
  2. Fluff couscous with a fork after 5 minutes.
Combine Ingredients
  1. In a large bowl, combine the fluffed couscous, pesto, cherry tomatoes, and spinach. Mix well to combine.
  2. If desired, sprinkle with grated parmesan cheese before serving.
