Ingredients
  

  • 1 cup smooth peanut butter
  • 1 cup light brown sugar
  • 1 large egg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 cup semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the peanut butter, brown sugar, egg, salt, and vanilla extract using an electric mixer.
  3. Add the all-purpose flour and mix on low speed until a sticky dough forms.
  4. Fold in the semi-sweet chocolate chips using a rubber spatula.
  5. Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet, spacing them 2 inches apart.
  6. Flatten each cookie dough ball with a fork to create a crisscross pattern.
  7. Bake for 7-8 minutes or until the edges are slightly browned, then cool on the pan for 5 minutes before transferring to wire racks.
