Ingredients
  

Base
  • 1 cup peanut butter creamy or crunchy
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Topping
  • 1/2 cup jelly or jam your choice of flavor

Method
 

Prepare the Oven and Baking Dish
  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  2. In a mixing bowl, combine peanut butter, brown sugar, granulated sugar, egg, and vanilla extract. Mix until smooth.
Mix Dry Ingredients
  1. In another bowl, whisk together flour, baking powder, and salt.
  2. Gradually add the dry ingredients to the peanut butter mixture, stirring until combined.
Assemble the Bars
  1. Spread half of the peanut butter mixture into the prepared baking dish.
  2. Spread the jelly or jam evenly over the peanut butter layer.
  3. Drop spoonfuls of the remaining peanut butter mixture over the jelly layer and spread gently.
Bake
  1. Bake in the preheated oven for 25-30 minutes or until the edges are golden brown.
  2. Allow to cool in the pan before cutting into bars.
