Method
Prepare the Oven and Pan
- Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
Mix Dry Ingredients
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
Mix Wet Ingredients
- In another bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and mashed peaches.
Combine Mixtures
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped pecans.
Bake the Bread
- Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
