One Skillet Salmon with Lemon Orzo

Ingredients
  

Salmon and Orzo
  • 4 fillets salmon skinless
  • 1 cup orzo uncooked
  • 2 cups chicken broth low sodium
  • 1 medium lemon zested and juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup fresh parsley chopped for garnish

Method
 

Cook the Orzo
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add the orzo and toast for 2-3 minutes, stirring frequently.
  3. Pour in the chicken broth, lemon juice, and lemon zest. Bring to a boil, then reduce heat to low and cover. Cook for 10-12 minutes until orzo is tender and liquid is absorbed.
Cook the Salmon
  1. While the orzo cooks, season the salmon fillets with salt, pepper, and oregano.
  2. In a separate pan, heat the remaining tablespoon of olive oil over medium-high heat.
  3. Add the salmon fillets and cook for 4-5 minutes on each side, or until cooked through and flaky.
Combine and Serve
  1. Once the orzo is cooked, fluff it with a fork and adjust seasoning if necessary.
  2. Serve the salmon on top of the lemon orzo, garnished with fresh parsley.

Notes
