Cook Shrimp
- In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes until shrimp are pink and opaque. Remove shrimp from skillet and set aside.
Sauté Vegetables
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
Cook Orzo
- Add orzo to the skillet and stir to combine. Pour in chicken broth and bring to a boil. Reduce heat to low and simmer for about 10 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
Combine Ingredients
- Stir in the spinach and cooked shrimp. Cook for an additional 2-3 minutes until spinach is wilted. Remove from heat and stir in grated parmesan cheese until melted and creamy.
Serve
- Serve warm, garnished with additional parmesan cheese if desired.
