Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
Pineapple
  • 1 cup fresh pineapple diced
Vegetables
  • 1 medium red bell pepper sliced
  • 1 medium red onion sliced
Spices
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Tortillas
  • 8 small corn tortillas
Toppings
  • 1 cup fresh cilantro chopped
  • 1 cup lime wedges

Method
 

Cook Chicken
  1. Heat the skillet over medium heat and add the chicken pieces. Cook for about 5-7 minutes until browned and cooked through.
  2. Add the cumin, chili powder, garlic powder, salt, and black pepper to the chicken, stirring to combine.
Add Vegetables and Pineapple
  1. Add the sliced red bell pepper and red onion to the skillet. Cook for another 5 minutes until the vegetables are tender.
  2. Stir in the diced pineapple and cook for an additional 3-4 minutes until heated through.
Assemble Tacos
  1. Warm the corn tortillas in a separate pan or microwave.
  2. Spoon the chicken and pineapple mixture onto each tortilla and top with fresh cilantro and lime wedges.
