Ingredients
  

Base Ingredients
  • 1 cup pecans chopped
  • 1 cup dates pitted and chopped
  • 1/2 cup oats rolled
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
Coating
  • 1/2 cup chopped pecans for rolling
  • 1/4 cup coconut flakes optional

Method
 

Prepare the Mixture
  1. In a food processor, combine the chopped pecans, dates, oats, maple syrup, vanilla extract, and salt.
  2. Pulse until the mixture is well combined and sticky.
Form the Balls
  1. Using your hands, scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
  2. Place the balls on a baking sheet lined with parchment paper.
Coat the Balls
  1. Roll each ball in the chopped pecans and coconut flakes (if using) until fully coated.
Chill and Serve
  1. Refrigerate the pecan pie balls for at least 30 minutes to firm up before serving.
