MOM'S FAMOUS MEATLOAF!!!!!

Ingredients
  

  • 1 to 1.5 pounds meatloaf mix
  • 3/4 cup diced red onion
  • 1/2 cup diced celery
  • 2 large eggs
  • 1/4 cup soy sauce or Tamari for gluten-free
  • 1/3 cup ketchup
  • 1 tablespoon dried oregano
  • 1 tablespoon chopped parsley
  • 2 teaspoons garlic powder
  • to taste black pepper
  • 1 cup quick oats
  • 1/4 cup light brown sugar
  • 1/4 cup ketchup for topping
  • 3 tablespoons stone ground mustard for topping
  • 1/2 teaspoon paprika for topping
  • 1/2 teaspoon pepper for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine all the meatloaf ingredients: meatloaf mix, diced red onion, diced celery, eggs, soy sauce, ketchup, dried oregano, chopped parsley, garlic powder, black pepper, quick oats, and light brown sugar.
  3. Shape the mixture into a loaf and place it in a baking pan.
  4. In another bowl, mix together all the topping ingredients: ketchup, stone ground mustard, paprika, and pepper. Brush this mixture over the top of the meatloaf.
  5. Bake in the preheated oven until the internal temperature reaches 160°F (70°C), about 75–85 minutes for a loaf.
