Ingredients
  

For the Tostadas
  • 8 pieces corn tostadas store-bought or homemade
  • 2 cups shredded rotisserie chicken skin removed
  • 1 cup refried beans optional
  • 1 cup shredded lettuce for topping
  • 1 cup diced tomatoes fresh
  • 1 avocado sliced for topping
  • 1/2 cup sour cream for drizzling
  • 1/4 cup fresh cilantro chopped, for garnish
  • 1 lime juiced for flavor
  • 1 teaspoon ground cumin for seasoning
  • 1 teaspoon chili powder for seasoning

Method
 

Prepare the Tostadas
  1. Preheat the oven to 400°F (200°C).
  2. Arrange the corn tostadas on a baking sheet.
  3. Spread a layer of refried beans on each tostada, if using.
  4. In a mixing bowl, combine the shredded chicken with lime juice, cumin, and chili powder.
  5. Top each tostada with a generous amount of the seasoned chicken.
  6. Bake in the preheated oven for about 10 minutes until heated through.
Assemble the Tostadas
  1. Remove the tostadas from the oven and let cool slightly.
  2. Top each tostada with shredded lettuce, diced tomatoes, and avocado slices.
  3. Drizzle with sour cream and sprinkle with chopped cilantro.
  4. Serve immediately and enjoy!
