Ingredients
  

Vegetables
  • 2 medium tomatoes diced
  • 1 medium green bell pepper diced
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
Eggs
  • 4 large eggs beaten
Spices and Seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes optional
Oils
  • 2 tablespoons olive oil

Method
 

Prepare the Vegetables
  1. Heat olive oil in a skillet over medium heat. Add chopped onions and sauté until translucent.
  2. Add minced garlic and diced green bell pepper, cooking for another 2-3 minutes until softened.
  3. Stir in the diced tomatoes and cook for about 5 minutes until they start to break down.
Cook the Eggs
  1. Reduce heat to low and pour the beaten eggs over the vegetable mixture.
  2. Gently stir the eggs with a spatula, allowing them to cook slowly for about 5-7 minutes until just set.
  3. Season with salt, black pepper, and red pepper flakes if using.
Serve
  1. Remove from heat and serve warm, optionally garnished with fresh parsley or feta cheese.
