Ingredients
  

Vegetables
  • 2 cups fresh spinach washed and chopped
  • 1 medium red onion thinly sliced
Cheeses
  • 1 cup feta cheese crumbled
  • 1 cup mozzarella cheese shredded
Tortillas
  • 4 large flour tortillas or whole wheat
Seasoning
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add sliced red onion and sauté until translucent, about 3 minutes.
  2. Add chopped spinach to the skillet and cook until wilted, about 2 minutes. Season with salt and pepper.
Assemble the Quesadillas
  1. On one half of each tortilla, layer the spinach mixture, crumbled feta, and shredded mozzarella.
  2. Fold the tortillas in half to cover the filling.
Cook the Quesadillas
  1. Wipe the skillet clean and return to medium heat. Cook each quesadilla for about 3-4 minutes on each side, until golden brown and the cheese is melted.
  2. Remove from skillet and let cool for a minute before slicing into wedges.
