Ingredients
  

Fish
  • 4 fillets white fish (e.g., cod or tilapia) fresh or thawed
Vegetables and Herbs
  • 1 cup cherry tomatoes halved
  • 1 cup kalamata olives pitted and sliced
  • 1 medium red onion sliced
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh oregano chopped
  • 1 lemon zest and juice
Seasoning
  • 3 tablespoons olive oil extra virgin
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Ingredients
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine cherry tomatoes, olives, red onion, garlic, parsley, oregano, lemon zest, and lemon juice.
Prepare the Fish
  1. Place the fish fillets in a baking dish and drizzle with olive oil.
  2. Season with salt and pepper.
Combine and Bake
  1. Spread the vegetable mixture evenly over the fish fillets.
  2. Bake in the preheated oven for 25 minutes, or until the fish flakes easily with a fork.
Serve
  1. Remove from the oven and let it rest for a few minutes before serving.
  2. Garnish with additional parsley if desired and serve warm.
