Meatloaf Recipe

A comforting classic meatloaf with a sweet and tangy chili glaze.

Ingredients
  

  • 2 lbs ground beef (90% lean)
  • 1 teaspoon dried parsley
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon Worcestershire sauce
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon Kosher salt
  • 1 small onion (finely diced)
  • 1 tablespoon garlic (minced)
  • 1 cup bread crumbs (plain)
  • 1 cup milk
  • 2 eggs (beaten)
  • 1 cup cheddar cheese (shredded)
  • 1/3 cup ketchup for glaze
  • 1 tablespoon tomato paste for glaze
  • 3 tablespoons brown sugar for glaze
  • 1 teaspoon apple cider vinegar for glaze
  • 2 tablespoons sweet chili sauce for glaze
  • 1 tablespoon mustard for glaze

Method
 

  1. Preheat oven to 400 degrees F.
  2. Cover a rimmed baking sheet with aluminum foil and lightly spray it with oil.
  3. In a large bowl, combine ground beef, dried parsley, Italian seasoning, paprika, red pepper flakes, Worcestershire sauce, black pepper, Kosher salt, diced onion, minced garlic, bread crumbs, milk, eggs, and shredded cheddar cheese.
  4. Transfer the mixture onto the prepared baking sheet and shape it into a loaf.
  5. In another bowl, whisk together ketchup, tomato paste, brown sugar, apple cider vinegar, sweet chili sauce, and mustard until smooth.
  6. Spread half of the glaze over the top of the meatloaf before placing it in the preheated oven. Bake for about 60 minutes or until it's cooked through.
  7. Once cooked through, remove from oven and let rest for about ten minutes before slicing.
