Marinate the Chicken
- In a mixing bowl, whisk together Dijon mustard, maple syrup, olive oil, garlic powder, salt, and black pepper.
- Add the chicken breasts to the bowl and coat them well with the marinade. Let them marinate for at least 15 minutes.
Prepare Sweet Potatoes
- Preheat the oven to 400°F (200°C).
- On a baking sheet, toss the cubed sweet potatoes with olive oil, paprika, and salt.
- Spread them out in a single layer and roast for 25-30 minutes, or until tender and golden, stirring halfway through.
Cook the Chicken
- While the sweet potatoes are roasting, heat a grill pan over medium heat.
- Remove the chicken from the marinade and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Assemble the Bowls
- In each bowl, layer mixed greens, roasted sweet potatoes, sliced chicken, cherry tomatoes, and feta cheese.
- Drizzle with balsamic vinegar before serving.
