Ingredients
  

Chicken Salad
  • 2 cups cooked chicken breast shredded
  • 1 cup Greek yogurt plain
  • 1 cup cherry tomatoes halved
  • 1 cup bacon cooked and crumbled
  • 1/4 cup green onions sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Lettuce Wraps
  • 8 leaves romaine lettuce or butter lettuce

Method
 

Prepare the Chicken Salad
  1. In a mixing bowl, combine the shredded chicken, Greek yogurt, cherry tomatoes, crumbled bacon, green onions, lemon juice, salt, and black pepper.
  2. Mix well until all ingredients are evenly coated.
Assemble the Wraps
  1. Take a lettuce leaf and spoon a generous amount of the chicken salad mixture onto the center.
  2. Fold the sides of the lettuce over the filling and serve immediately.
