Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 3/4 cup cake flour
  • 1 tsp corn starch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter cubed
  • 1/2 cup light brown sugar packed
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract optional
  • 2 cups milk chocolate chips or semi-sweet

Method
 

  1. Gather your ingredients and ensure everything is organized.
  2. Preheat your oven to 400°F.
  3. In a large bowl, whisk together the all-purpose flour, cake flour, corn starch, baking powder, baking soda, and salt.
  4. In the bowl of your stand mixer, cream the cold butter and sugars until light and fluffy.
  5. Add the egg, egg yolk, and vanilla extract to the butter-sugar mixture and mix until combined.
  6. Gradually add the dry mixture to the wet mixture until just incorporated, then fold in the chocolate chips.
  7. Measure out portions of dough weighing about 5.7 oz each and shape them without flattening.
