Method
Marinate the Chicken
- In a mixing bowl, combine olive oil, yogurt, cumin, coriander, paprika, turmeric, cinnamon, garlic, salt, pepper, and lemon juice.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Cook the Chicken
- Preheat the oven to 200°C (400°F) or prepare the grill for medium-high heat.
- If using the oven, place the marinated chicken on a baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 75°C (165°F).
- If grilling, cook the chicken for about 6-7 minutes per side, or until fully cooked and juices run clear.
Serve
- Remove the chicken from the oven or grill and let it rest for 5 minutes.
- Slice the chicken and serve in pita breads with hummus, tabbouleh, and pickled vegetables.
