Ingredients
  

Salad Base
  • 2 cups cooked chicken shredded or diced
  • 1 cup romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup pepperoncini sliced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Toppings
  • 1/4 cup Parmesan cheese grated
  • 1/4 cup fresh basil chopped

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the cooked chicken, romaine lettuce, cherry tomatoes, cucumber, red onion, and pepperoncini.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic powder, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss to coat evenly.
  2. Top with grated Parmesan cheese and chopped fresh basil before serving.
