Prepare the Bacon
- Preheat the oven to 400°F (200°C). Place the bacon slices on a baking sheet and brush with maple syrup. Sprinkle black pepper on top.
- Bake for 15 minutes or until crispy. Remove from oven and let cool. Chop into small pieces.
Make the Deviled Egg Filling
- Slice the hard-boiled eggs in half lengthwise and remove the yolks. Place the yolks in a mixing bowl.
- Add mayonnaise, Dijon mustard, white vinegar, salt, and cayenne pepper to the yolks. Mash and mix until smooth.
Assemble the Deviled Eggs
- Spoon or pipe the yolk mixture back into the egg whites.
- Top each egg with crispy bacon bits and a sprinkle of chopped chives.
