Ingredients
  

  • 2 packages cream cheese 8 ounces each
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 16 ounces smoked gouda shredded, divided
  • 1 pound bacon cooked and chopped, divided
  • 3 scallions chopped, divided
  • freshly ground black pepper to taste

Method
 

  1. Preheat your oven to 400F degrees.
  2. Soften the cream cheese in the microwave for about 30 seconds, then whisk in the mayonnaise and sour cream until smooth.
  3. Reserve 1/3 cup of shredded smoked gouda, 1/4 cup of chopped bacon, and 2 tablespoons of chopped scallions for topping.
  4. Combine the remaining smoked gouda, chopped bacon, chopped scallions, and black pepper into the cream cheese mixture.
  5. Transfer the mixture to an oven-proof dish, sprinkle with reserved toppings, and bake for about 30 minutes until golden brown.
  6. Garnish with reserved scallions before serving.
  7. Serve warm with crackers, veggie sticks, or toasted bread.
