Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup feta cheese, crumbled
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes adjust to taste
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • 1 piece lemon, sliced for serving

Method
 

  1. In a medium bowl, combine the honey, olive oil, apple cider vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Whisk these ingredients together until they form a smooth mixture.
  2. Place the boneless, skinless chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is generously coated. Seal the bag or cover your dish with plastic wrap and pop it in the refrigerator.
  3. In a small bowl, combine crumbled feta cheese with a drizzle of olive oil and sprinkle in some salt and black pepper. Mix gently until everything is well combined.
  4. Preheat the oven to 400°F (200°C).
  5. Remove the marinated chicken from the fridge, discard any leftover marinade, and place each breast in a baking dish. Spoon the feta mixture evenly over each piece of chicken. Bake for about 25 to 30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
