Ingredients
  

Pasta and Chicken
  • 8 oz elbow macaroni or any pasta of choice
  • 2 cups cooked chicken breast shredded or diced
  • 1 cup honey BBQ sauce store-bought or homemade
Cheese Sauce
  • 2 tbsp butter unsalted
  • 2 tbsp all-purpose flour
  • 2 cups milk whole or 2%
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Toppings
  • 1/4 cup bread crumbs optional for crunch
  • 1/4 cup parmesan cheese grated, optional

Method
 

Cook Pasta
  1. In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Prepare Cheese Sauce
  1. In the same pot, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until lightly golden.
  2. Gradually whisk in milk, stirring constantly until the mixture thickens, about 5-7 minutes.
  3. Remove from heat and stir in cheddar and mozzarella cheese until melted and smooth. Season with garlic powder, onion powder, salt, and pepper.
Combine Ingredients
  1. Add the cooked pasta and shredded chicken to the cheese sauce, stirring to combine evenly.
  2. Stir in honey BBQ sauce until well mixed.
Bake
  1. Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture to a baking dish.
  2. Sprinkle bread crumbs and parmesan cheese on top if using.
  3. Bake for 15-20 minutes until bubbly and golden on top.
Serve
  1. Remove from oven and let cool for a few minutes before serving. Enjoy your high protein honey BBQ chicken mac & cheese!
