Prepare the Chicken and Potatoes
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper, then add to the skillet.
- Cook the chicken for about 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add the halved baby potatoes and cook for about 10 minutes until slightly tender.
Make the Creamy Garlic Sauce
- In a mixing bowl, combine minced garlic, heavy cream, shredded cheddar cheese, thyme, and parsley. Mix well.
Combine and Bake
- In a baking dish, combine the cooked chicken and potatoes. Pour the creamy garlic sauce over the top and stir to combine.
- Bake in the preheated oven for 25-30 minutes until bubbly and golden on top.
- Remove from oven and let cool for a few minutes before serving.
