Ingredients
  

Chicken and Potatoes
  • 4 pieces boneless, skinless chicken breasts cut into bite-sized pieces
  • 4 cups baby potatoes halved
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Creamy Garlic Sauce
  • 4 cloves garlic minced
  • 1 cup heavy cream or Greek yogurt for a lighter option
  • 1 cup shredded cheddar cheese or any cheese of choice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley

Method
 

Prepare the Chicken and Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Season the chicken pieces with salt and pepper, then add to the skillet.
  3. Cook the chicken for about 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add the halved baby potatoes and cook for about 10 minutes until slightly tender.
Make the Creamy Garlic Sauce
  1. In a mixing bowl, combine minced garlic, heavy cream, shredded cheddar cheese, thyme, and parsley. Mix well.
Combine and Bake
  1. In a baking dish, combine the cooked chicken and potatoes. Pour the creamy garlic sauce over the top and stir to combine.
  2. Bake in the preheated oven for 25-30 minutes until bubbly and golden on top.
  3. Remove from oven and let cool for a few minutes before serving.
