Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken thighs cut into bite-sized pieces
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 inch ginger grated
Bowl Ingredients
  • 2 cups cooked jasmine rice
  • 1 cup pineapple diced, fresh or canned
  • 1 cup red bell pepper sliced
  • 1 cup cucumber sliced
  • 1/2 cup green onions chopped
  • 1/4 cup cilantro chopped
Sauce
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1 tbsp sesame oil

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Add chicken pieces and marinate for at least 20 minutes.
Cook the Chicken
  1. Preheat the grill to medium-high heat. Grill the marinated chicken for about 5-7 minutes on each side or until fully cooked.
Prepare the Sauce
  1. In a small bowl, whisk together soy sauce, honey, lime juice, and sesame oil. Set aside.
Assemble the Bowls
  1. In each bowl, place a serving of jasmine rice. Top with grilled chicken, pineapple, red bell pepper, cucumber, green onions, cilantro, and avocado. Drizzle with sauce.
