Ingredients
  

  • ¼ cup olive oil
  • 8 leaves basil (fresh)
  • as needed kosher or table salt
  • 10 balls fresh mozzarella (bocconcini, ciliegine, “cherry sized”)
  • 5 pieces black olives (whole pitted, medium or large)
  • ½ pound chicken ham (sliced thinly)
  • 1 ½ ounces balsamic glaze
  • 8 ½ ounces sun-dried tomatoes (packed in oil, julienne cut)
  • as needed flake salt

Method
 

  1. Start by gathering all your ingredients on a clean workspace. Make sure you have fresh mozzarella balls, sliced chicken ham, black olives, sun-dried tomatoes, and fresh basil.
  2. Take your black olives and slice them in half horizontally. Each half will serve as the pupil for your mozzarella eyeball.
  3. Grab a mozzarella ball and gently press it into a piece of thinly sliced chicken ham, wrapping it completely. Place the olive half on top to create the pupil.
  4. Take your julienne-cut sun-dried tomatoes and tuck them around the mozzarella balls on your serving platter.
  5. Drizzle balsamic glaze over the assembled eyeballs generously.
  6. Tear fresh basil leaves into smaller pieces and sprinkle them over your platter.
  7. Cover your platter with plastic wrap or foil and refrigerate for about 30 minutes before serving.
