Ingredients
  

Ground Beef Mixture
  • 1 lb ground beef preferably 80/20 for flavor
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz can
  • 1 cup beef broth low sodium
  • 1 tbsp olive oil for cooking
  • 1 tsp Italian seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Gnocchi
  • 1 pkg gnocchi 16 oz, store-bought or homemade
Garnish
  • 1/4 cup fresh basil chopped
  • 1/2 cup Parmesan cheese grated

Method
 

Cook the Gnocchi
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top, about 2-3 minutes. Drain and set aside.
Prepare the Ground Beef Mixture
  1. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Add ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  4. Stir in diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
Combine and Serve
  1. Add the cooked gnocchi to the skillet with the beef mixture. Gently toss to combine and heat through for 2-3 minutes.
  2. Serve hot, garnished with chopped basil and grated Parmesan cheese.
