Ground Beef Enchiladas

Delicious enchiladas filled with seasoned ground beef, topped with cheese and enchilada sauce.

Ingredients
  

Filling
  • 1 lb Ground Beef 85% lean
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Salt
  • 1 cup Cheddar Cheese shredded
Sauce
  • 1 can Enchilada Sauce 15 oz
  • 1 cup Sour Cream
Wraps
  • 8 pieces Corn Tortillas

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
  2. Add chopped onion and minced garlic, cooking until softened, about 3-4 minutes.
  3. Stir in cumin, chili powder, and salt, cooking for another minute.
  4. Remove from heat and mix in 1 cup of shredded cheddar cheese.
Assemble the Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  3. Warm the corn tortillas in a skillet or microwave until pliable.
  4. Place a portion of the beef filling in each tortilla, roll them up, and place seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and top with sour cream and remaining cheese.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, until cheese is bubbly and golden.

Notes
