Ingredients
  

Grains and Base
  • 1 cup quinoa rinsed and drained
  • 2 cups vegetable broth for cooking quinoa
  • 1 cup chickpeas cooked or canned, drained and rinsed
  • 2 cups baby spinach fresh
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup radishes thinly sliced
Green Goddess Dressing
  • 1 cup fresh parsley packed
  • 1/2 cup fresh basil packed
  • 1/4 cup Greek yogurt or vegan alternative
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1/4 cup olive oil

Method
 

Cook Quinoa
  1. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until quinoa is fluffy.
  2. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
Prepare Dressing
  1. In a blender, combine parsley, basil, Greek yogurt, lemon juice, garlic, and olive oil. Blend until smooth.
  2. Season with salt and pepper to taste.
Assemble Bowl
  1. In a large mixing bowl, combine cooked quinoa, chickpeas, spinach, cherry tomatoes, cucumber, radishes, and avocado.
  2. Drizzle with green goddess dressing and toss gently to combine.
  3. Serve immediately, garnished with extra herbs if desired.
