Ingredients
  

  • 1 lb ground chicken or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup Greek yogurt (full-fat)
  • 1 medium cucumber, grated
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 cups cooked rice white or brown
  • 1 cup fresh veggies e.g., diced tomatoes and bell peppers

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground chicken or turkey, breadcrumbs, parsley, garlic, salt, and pepper. Mix until combined.
  3. Shape the mixture into one-inch meatballs and place on a parchment-lined baking sheet.
  4. Bake for about 20-25 minutes or until golden brown and cooked through.
  5. In a medium bowl, mix Greek yogurt with grated cucumber, lemon juice, and a pinch of salt and pepper.
  6. Prepare rice according to package instructions.
  7. Assemble bowls with rice, meatballs, fresh veggies, and tzatziki sauce.
